This salad is at the very top of our list of favorites. The pear adds the perfect freshness and sweetness to the roasted beets and baby spring greens. You are going to love this salad!
4 cups fresh mixed baby spring greens
1 pear, cored and sliced
1 large roasted beet, thinly sliced
1/2 cup candied walnuts, chopped (optional)
1/2 cup pear vinaigrette dressing
4 tablespoons of Vegan Feta (optional)
Toss the greens, pear, and beets together in a large bowl.
Divide the salad between two bowls or plates, sprinkle each with candied walnuts if using, and drizzle with dressing. Top each with two tablespoons of vegan feta.
Yield 2 servings.
