Pita bread is this light and yummy vehicle that you can stuff with all of your favorite foods. For this one, we've kept things fresh and deliciously simple. However, you can get creative by adding different plant-based meats, cheeses, or spiced hummus!

Here's how we made this summertime lunch favorite:

2 pieces of pita bread, halved
3 medium vine-ripe tomatoes, sliced
1/2 purple onion, thinly sliced
1 English cucumber, thinly sliced
Several green leaf lettuce leaves
a handful of basil, cilantro, dill, and clover leaves (optional)

Super Yummy Sandwich Sauce:
In a small bowl mix together the following ingredients:

  • 1/4 cup vegan mayo
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon coriander
  • 1/2 teaspoon hot sauce
  • Stir until well combined.

    Open each half of the pita bread and begin building your sandwich. Start with a drizzle of the sauce. Next, add your lettuce, tomato slices, onion, and cucumber. Tuck in a basil leaf or cilantro leaf and sprouts or clover for a beautiful presentation and a tasty surprise!

    Add more sauce to taste.
