Pita bread is a light and yummy vehicle for stuffing your favorite foods. For this one, we've kept things deliciously fresh and simple. But you can add different plant-based meats, cheeses, or spiced hummus to be as creative as you like!
Here's how we made this summertime lunch favorite:
2 pieces of pita bread, halved
3 medium vine-ripe tomatoes, sliced
1/2 purple onion, thinly sliced
1 English cucumber, thinly sliced
Several green leaf lettuce leaves
a handful of basil, cilantro, dill, and clover leaves (optional)
Super Yummy Sandwich Sauce:
In a small bowl, mix the following ingredients:
Stir until well combined.
Open each half of the pita bread and begin building your sandwich. Start with a drizzle of the sauce. Next, add your lettuce, tomato slices, onion, and cucumber. Tuck in basil, cilantro, sprouts, or clover for a beautiful presentation and a tasty addition!
