Sauteed Zucchini and Onion

Everyone with a garden learns that zucchini plants generally grow in abundance. And finding several ways to enjoy them comes with the territory. Here's one of our favorites!

6 medium zucchini
1 tablespoon olive oil
1 large yellow onion, cut in half and sliced to 1/2-inch thick
1 teaspoon kosher salt
Freshly ground black pepper
Vegan parmesan or nutritional yeast to taste

Prepare the zucchini by removing the ends and cutting it in half lengthwise. Next, slice the zucchini diagonally into 1/2-inch wedges.

Heat the oil in a large skillet over medium-high heat. Add the onions and reduce the heat to medium-low. Cook for 10 to 12 minutes, stirring often, just until they begin to brown. Add the zucchini, salt, and freshly ground pepper to the pan. Stir, turning the zucchini occasionally as it begins to brown. Cook for another 8 to 10 minutes, until tender.

Toss with vegan parmesan or nutritional yeast before serving.
