Roasted chickpeas are irresistible, crunchy little bites of heaven. They're high in fiber, which is good news for your waistline, and they're extremely satisfying!
Here's all you need!
1 15-ounce can chickpeas, drained and rinsed
2 teaspoons olive oil
1/2 teaspoon salt (or to taste)
1/2 teaspoon cumin (or other spice of choice)
Preheat the oven to 400°.
Thoroughly dry the chickpeas between two kitchen towels, then spread them in an even layer on a baking sheet.
Roast, shaking every 10 minutes, for 40 minutes. Remove from the oven and toss with oil, salt, and spice.
Return to the oven, then turn off the heat and leave in the oven for another 15 to 20 minutes or until the chickpeas are crisp all the way through.
