Herb Mayonnaise is an excellent way to add extra flavor to sandwiches, veggie burgers, potatoes, and more! In this recipe, we used a small handful of chopped fresh basil. But let your imagination be your guide, using fresh herbs you and your family enjoy most. See below for some of our other favorites.
1 cup organic silken tofu
1 tablespoon Dijon mustard
1 tablespoon cider vinegar
1/2 teaspoon kosher salt
3 tablespoons light extra virgin olive oil
2 to 4 tablespoons chopped fresh herbs (any)
Combine the tofu, mustard, vinegar, and salt in a Blender. Blend until well combined.
Through the hole in the top of the blender, slowly drizzle in the oil, blending until completely smooth.
Stir in 1 to 2 tablespoons of chopped fresh herbs.
Hint: Keep the recipe the same and choose fresh herbs that appeal to you —dill, basil, chives, oregano, cilantro, or others that you and your family might enjoy. Try combining flavors that you love, such as tarragon and chive or basil and dill.
