You don't have to stop eating mayo just because you're vegan. And even though you can buy vegan mayonnaise from your local grocer, making it and controlling what goes in it may feel like a better option. Plus, you can adjust the recipe to make as much or as little as you need.
1 cup silken organic tofu
1 tablespoon Dijon mustard
1 tablespoon cider vinegar
1/2 teaspoon kosher salt
3 tablespoons canola oil
Combine the tofu, mustard, vinegar, and salt in a blender.
Blend until well combined.
Through the hole in the top of the blender, slowly drizzle in the oil, mixing until completely smooth.
Keep refrigerated.
Try spreading your homemade vegan mayo on your favorite bread with sliced heirloom tomatoes or other veggies of choice. Delicious!
