Sometimes the simplest things taste the absolute best. And this dressing is just that! Simply the best!
2/3 cup good extra virgin olive oil
1/3 cup lemon juice
1/3 cup oil-packed sun-dried tomatoes, minced
1/4 cup vegan mayonnaise
1/4 cup finely chopped fresh basil
1 clove of garlic, crushed
1 tablespoon capers, chopped
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Whisk together all of the ingredients until well blended, then chill.
When you're ready to serve, toss the dressing with fresh arugula, baby spinach, or spring salad mix for a fabulous side salad or meal!
Add red onion, fresh-cut tomatoes, and vegan bacon crumbles for variety.
Refrigerate any remaining dressing.
