Russian Tea Cakes are beyond delicious. One bite and you'll feel as if you've entered culinary heaven.
1 cup vegan butter
1/2 cup powdered sugar
1/2 teaspoon pure vanilla extract
1/2 teaspoon almond extract
2 1/4 cups unbleached all-purpose flour
3/4 cup finely chopped walnuts or pecans
1/4 teaspoon salt
Powdered sugar, for rolling
Heat oven to 400° F
Cream together the butter, powdered sugar, vanilla, and almond in a large bowl. Stir in the flour, nuts, and salt until the dough holds together.
Shape the dough into 1-inch balls. Place about 1-inch apart on an ungreased baking sheet.
Bake for 10 - 12 minutes until set but not brown. Remove from baking sheet, and cool slightly on wire rack.
Roll warm cookies in powdered sugar. Cool on a wire rack. Roll in powdered sugar once more.
