These Oatmeal Craisin Walnut Cookies bake up light, sweet, and crisp and are utterly irresistible.
1 cup rolled oats
3/4 cup unbleached all-purpose flour
1/3 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon fine sea salt
1/3 cup real maple syrup
1/2 cup safflower oil
1 teaspoon vanilla extract
1 teaspoon molasses
1/4 cup chopped craisins (or other dried fruit) Pick one you love!
1/4 cup finely chopped walnuts
Preheat the oven to 350° F. Line a Baking Sheet (or two) with parchment paper.
Combine the oats, flour, sugar, baking powder, baking soda, and salt in a large bowl.
In a separate bowl, combine the syrup, oil, vanilla extract, and molasses.
Add the wet ingredients to the dry ingredients, and stir to combine. Next, fold in the craisins and nuts.
Use your hands to roll tablespoon-size scoops of dough into balls, then place them onto the prepared baking sheet, and press down slightly to flatten the tops—Bake for 10 to 12 minutes or until lightly golden brown.
Transfer cookies to a Wire Cooling Rack and cool completely.
For a variation of this recipe, try adding semi-sweetened chocolate chips in place of or in addition to the craisins. Also, swap out any nuts in place of the walnuts if desired.
Yield 12 to 14 Cookies.
