This Reuben sandwich will change your world! Or rock it, at the very least! It has the perfect combination of flavor and texture so that even your non-vegan friends and family will love it!
Make the dressing by combining the ingredients listed below in a small bowl. Set aside.
1000 Island Dressing:
1/4 cup vegan mayo
2 tablespoons ketchup
1 tablespoon Dijon mustard
1 to 2 tablespoons sweet pickle relish
For the Reuben
1 tablespoon olive oil
vegan deli-style corn'd beef, ham, or turkey deli slices
sauerkraut
vegan swiss cheese or other white melty cheese
rye bread
vegan butter
1000 Island dressing (easy recipe follows)
Add the olive oil to a large skillet over medium heat. Layer the deli slices on one side of the skillet, then add the sauerkraut to the opposite side.
Stir the sauerkraut occasionally until about half of the moisture has cooked off. Cook the deli slices for 1 to 2 minutes, until slightly browned, then flip them over and cook for 1 minute more.
Meanwhile, butter one side of each slice of bread. Place the first slice of bread, butter side down, into the skillet.
Add the cheese, then place the deli slices on top, and top with the sauerkraut. Drizzle a layer of dressing over the sauerkraut, then top with the other slice of bread.
Grill until nicely golden, then turn to grill the other side.
Remove the Reuben from the pan, place it onto a serving plate, and add additional dressing if desired.
