This pie is so simple and irresistible. You are going to love it. It's one of our most popular go-to desserts for last-minute get-togethers.

2 1/2 cups non-dairy milk (we used almond milk)
1 cup sugar
3/4 cup freshly squeezed key lime juice
5 tablespoons cornstarch
2 teaspoons organic lime zest

Whisk all ingredients together in a saucepan and heat over moderate heat, continuously stirring until the mixture is nice and thick.

Pour into a prepared 8 or 9-inch pie crust, graham cracker crust, or individual serving dishes. Cool.

Top each serving with whipped cream topping and garnish with a thin wedge of lime.

Keep refrigerated and enjoy within 3 to 5 days.
