When I first learned that a company named JUST Egg had created a liquid "egg" that you could scramble like real eggs, it felt a little like hitting the jackpot. But making scrambled "eggs" was just the beginning.

Using this product to make various delicious recipes, including quiche, is easy and convenient.

There are many variables to making a quiche and many ingredients one could use. We're JUST getting started!

Here is what you need:

One 9-inch pie crust, fresh or frozen, homemade or store-bought

One bottle (12 ounces), Just Egg
1 cup fresh spinach, chopped
1/2 cup of mushrooms, chopped (Reserve and slice one mushroom for the top of the quiche)
Four strips of vegan bacon, chopped
1/2 cup shredded vegan parmesan
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt and pepper
1 Roma tomato, thinly sliced

Preheat the oven to 350° F

Shake the Just Egg bottle vigorously and pour it into a large mixing bowl. Stir in the spinach, mushrooms, bacon, and seasonings to combine.

Next, Place the pie crust onto a baking sheet. Then sprinkle the vegan cheese evenly into the bottom of the pie shell.

Next, slowly pour the Just Egg mixture into the pie shell over the cheese. Finally, top the pie with the sliced mushroom and tomato slices.

Place the quiche into the oven on the center rack and bake at 350° F for 1 hour or until the center is no longer jiggly.

Let stand for 2 to 3 minutes before serving.

Refrigerate any leftovers and enjoy them within 3 to 5 days.
