Vegan Tofu Egg-like Scramble

This vegan "egg-like" tofu scramble gets its "egg" flavor from the black salt (Kala Namak). Black salt is a must-have in the kitchen for recipes that call for an egg-like flavor because it tastes like eggs and smells like eggs! Now, let's get to cooking!

1 15.5-ounce package of extra firm tofu
1/2 teaspoon black salt
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon turmeric
1/4 cup nutritional yeast flakes

Use a Tofu Press , to drain the tofu of most of its water. If you don't have a press, place the tofu onto clean, lint-free kitchen or paper towels, and drain off most of the water.

In a medium bowl, mash the tofu with the back of a fork. Add the seasonings to the tofu, and toss to coat evenly.

Meanwhile, heat a large skillet over medium heat and add one tablespoon of olive oil or vegan butter. When the oil is hot, add the tofu mixture and cook for 10 to 12 minutes, stirring occasionally.

This tofu egg-like scramble is excellent on its own, for breakfast burritos, or for topping your toast after adding our Avocado Mayo as shown here.
