This Independence Day Salad is colorful, flavorful, and fun to make! It's super simple, with only a few ingredients.

Here's what I used for this one:

One medium-sized seedless watermelon
2 pints of raspberries
2 pints of blueberries
Fresh mint

Cut the watermelon into 1/2-inch slices. Don't worry about cutting away the rine. Then, using a star-shaped cookie cutter cut out as many stars as possible, starting inward of the rine by about a half inch.

If you don't have a star-shaped cookie cutter, not to worry. Simply cut bite-sized cubes of watermelon instead. Your salad will still be beautiful, festive, and delicious!

Add the raspberries and blueberries, gently toss to distribute evenly, and garnish with fresh mint leaves.

Another fun idea is to place watermelon cubes, blueberries, and vegan feta onto a platter in a flag pattern, as shown below.
