These Home-Style Fried Potatoes are like a giant hug from home. Nothing says comfort like a warm plate of deliciously seasoned home-style fried potatoes.

4 pounds baby yellow or Yukon gold potatoes
1/4 cup (or half stick) Earth Balance Butter or olive oil.
1 medium yellow onion, sliced
3 cloves garlic, minced
1 teaspoon of sea salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon fresh rosemary (optional)

Scrub the potatoes clean and add them to a large pot with a 5 to 6-quart steamer basket. Steam until tender but still firm; about 10 to 18 minutes depending on the size of the potatoes. Remove them from the basket and set them aside to cool. When they are cool enough to handle, cut them into 1/2-inch cubes.

Meanwhile, in a large skillet, melt the butter over medium-high heat. Add the onion and garlic, and cook, stirring until the onions are translucent and brown, around 3 to 5 minutes.

Add the cubed potatoes to the skillet along with the salt and pepper. Cook, occasionally stirring with a flat spatula, being careful not to smash them. Cook for 20 to 30 minutes or until they are tender and golden on all sides.

Add the fresh rosemary, if using, in the last few minutes of cooking. Stir to combine and serve.
