I've never had guacamole I didn't like, but I have had a few I love, like this Hawaiian Guacamole.

The inspiration came, of course, from Hawaii itself! Dinner one night included chips, salsa, and this delicious guacamole with fresh pineapple and mango.

I'd never tasted anything like it!

That was a few years ago, but I managed to recreate that delicious guacamole at home. Now, I can enjoy it anytime I likeā€”and so can you!

Ingredients:

4 ripe avocados
3/4 cup chopped pineapple, fresh or canned
1/2 cup chopped mango, fresh or frozen
1/3 cup chopped red onion
3 tablespoons chopped cilantro
3 cloves garlic, minced
1 jalapeno, minced or grated (more seeds=more heat)
grated zest of one lime
juice of one lime
1/2 teaspoon ground cumin
pinch of salt
pinch of crushed red pepper, optional

Instructions:

Cut each avocado in half and remove the seed. Scoop out the flesh into a medium-sized bowl and mash. Add all of the other ingredients and stir to combine. Adjust seasoning to taste.

Enjoy with your favorite chips.

Refrigerate any leftovers and enjoy within three days.
