We've never stumbled upon guacamole we didn't like, but we have stumbled upon a few we love, like this Hawaiian Guacamole. Give it a try - you're going to love it!
2 ripe avocados
3/4 cup chopped pineapple, fresh or canned
1/2 cup chopped mango, fresh or frozen
1/3 cup chopped red onion
3 tablespoons chopped cilantro
3 cloves garlic, minced
grated zest of one lime
juice of one lime
1/4 teaspoon ground cumin
pinch of salt
pinch of crushed red pepper, optional
Cut the avocados in half and remove the seed. Scoop out the flesh into a medium-size bowl and mash it up. Add all the other ingredients to the avocado and stir to combine. Adjust seasoning to taste.
Enjoy right away with your favorite chips. Refrigerate any leftovers for up to 24 hours.
