Hasselback Potatoes are thinly sliced potatoes baked to crispy perfection and then often topped with cheese, sour cream, bacon (all vegan, of course), and green onion, and they're delicious!

If you've never had Hasselback potatoes, you're in for a real treat.

Here's what you need:

6 medium-sized russet potatoes
1/4 cup extra virgin olive oil
1/4 cup vegan butter, melted
1/2 teaspoon salt
1/4 teaspoon pepper

Optional toppings:
green onion, sliced
6 slices prepared vegan bacon, chopped
1/2 cup of vegan sour cream
1/2 cup vegan cheddar, shredded

Preheat the oven to 425° F. Line a baking sheet with parchment paper.

Place a potato on a cutting board between two chopsticks. Using a sharp knife, cut 1/4-inch slices in the potato. The chopsticks will stop you from cutting through the potato completely. You want the potato to stay together at the bottom. Repeat the process with the remaining potatoes. Place the potatoes on the baking sheet.

Mix the oil, melted butter, salt, and pepper in a small bowl. Brush the mixture onto the potatoes, making sure to get some between each slice.

Bake for about 1 hour or until the potatoes are tender and golden.

Remove the potatoes from the oven and let them cool for about 5 to 10 minutes before adding any toppings.

Cover and refrigerate any leftovers and enjoy within 3 to 5 days. Reheat the potatoes in the microwave, oven, or air fryer.
