Easy to make Vegan Pancakes

Pancakes are the perfect comfort food—and this is the perfect recipe! These vegan pancakes are light, fluffy, and delicious.

2 cups all-purpose white flour
1 tablespoon baking powder
3/4 teaspoon salt
3 tablespoons sugar
1 1/3 almond milk or other non-dairy milk
2/3 cups water
2 tablespoons melted vegan butter or oil
1 teaspoon pure vanilla extract

Whisk the flour, baking powder, salt, and sugar in a large mixing bowl.

Pour the milk, water, melted butter, and vanilla extract into the bowl with the dry ingredients and stir with a large spoon until just combined. (You want a lumpy batter; do not overmix.)

Heat a large griddle or skillet over medium-high heat. Grease the pan using cooking spray or melted vegan butter. Drop about 1/3 cup of batter onto it. Cook until bubbles form on the top of the pancake, then flip and cook until golden brown on the other side, about 1 to 2 minutes more. Repeat with the remaining batter.

Enjoy hot. Place any leftovers in a sealed container and refrigerate for up to a week.

To reheat, simply pop them in the microwave for about one minute.
