Homemade Blueberry Syrup is perfect for pancakes, waffles, French toast, and even ice cream. It's super easy to make, and it's delicious!

2 cups Blueberries, fresh or frozen
1/2 cup sugar
1 cup + 3 tablespoons water, divided
1 tablespoon cornstarch

Mix three tablespoons of water and the cornstarch in a small bowl to make a slurry and set it aside.

Add one cup of water, the blueberries, and the sugar to a medium pot and bring it to a boil. Reduce heat and simmer for 10 minutes, uncovered.

Slowly stir in the cornstarch mixture and cook for one to two minutes more. Remove the syrup from heat and allow to cool slightly before using.

Store any remaining syrup in a sealed container (canning jars work great!) and enjoy within two weeks.

If you prefer a smooth syrup, place the mixture in a high-powered blender for about a minute or until you reach the desired consistency.
