Sweet and Salty Homemade Caramel Corn is a delicious treat everyone loves! And fall is the perfect time to serve it.
Oh, who are we kidding? Anytime is the ideal time to serve it!
1 cup (2 sticks) Earth Balance Vegan Buttery Sticks
2 cups brown sugar, packed
1/2 teaspoon fine sea salt
1/2 cup light corn syrup
1 teaspoon baking soda
1/2 cup peanuts (Optional)
Pop the Popcorn and place 10 cups popped popcorn in a large roasting pan. Set aside.
Preheat oven to 200 degrees F.
In a medium-sized saucepan over medium heat, combine buttery sticks, brown sugar, salt, and corn syrup. Bring to a boil, stirring often. Boil for 5 minutes. Remove mixture from heat and stir in the baking soda until well combined.
Pour the sugar mixture over the popcorn. (Toss the peanuts in now, if using).
Using a large spoon or spatula, stir to coat well. Place the roasting pan in the oven and bake for 1 hour, stirring every 15 minutes.
Spread the caramel corn onto waxed paper to cool.
