Caramel Corn

Sweet and Salty Homemade Caramel Corn is a delicious treat everyone loves! And fall is the perfect time to serve it. Oh, who are we kidding? Anytime is the perfect time to serve it!

1 cup (2 sticks) Earth Balance Vegan Buttery Sticks
2 cups brown sugar, packed
1/2 teaspoon fine sea salt
1/2 cup light corn syrup
1 teaspoon baking soda

Pop the popcorn and place 10 cups popped popcorn in a large roasting pan. Set aside.

Preheat oven to 200 degrees F.

In a medium-sized saucepan over medium heat, combine buttery sticks, brown sugar, salt, and corn syrup. Bring to a boil stirring often. Boil for 5 minutes. Remove mixture from heat and stir in the baking soda until well combined.

Pour the sugar mixture over the popcorn.

Using a large spoon or spatula stir to coat well. Place the roasting pan in the oven and bake for 1 hour, stirring every 15 minutes.

Spread the popcorn onto waxed paper and cool completely.
