Sweet and Salty Homemade Caramel Corn is a delicious treat everyone loves! And fall is the perfect time to serve it.

Oh, who are we kidding? Anytime is the ideal time to serve it!

10 cups prepared (popped) popcorn
1 cup (2 sticks) of vegan butter
2 cups brown sugar, packed
1/2 teaspoon fine sea salt
1/2 cup light corn syrup
1 teaspoon baking soda
1/2 cup peanuts (Optional)

Pop the Popcorn and place 10 cups popped popcorn in a large Roasting Pan. Set aside.

Preheat oven to 200 degrees F.

In a medium-sized saucepan, combine the vegan butter, brown sugar, salt, and corn syrup in a saucepan over medium heat. Bring the mixture to a boil, stirring often. Continue to boil for 5 minutes, then remove from the heat and stir in the baking soda until well combined.

Pour the sugar mixture over the popcorn and toss the peanuts in now, if using.

Using a large spoon or spatula, stir to coat the popcorn. Place the roasting pan in the oven and bake for 1 hour, stirring every 15 minutes.

Spread the caramel corn onto waxed paper to cool.
