Trust us when we say you're going to love this salad! It's light, it's earthy, and it's so simple to make. It's like summer on a plate!

6 Ounces of Baby Spinach, rinsed
2 to 3 tangerines, peeled, sections divided
1/8 Cup Almonds - Roughly Chopped or Slivered
6 cherry tomatoes, halved
thinly sliced red onion
Citrus Dressing (recipe follows)

White Balsamic Citrus-Basil Dressing:

1/4 cup filtered water
1/4 cup white balsamic vinegar
2 tablespoons agave nectar
2 tablespoons extra virgin olive oil
1 tablespoon yellow mustard
1 clove of garlic, minced
1 teaspoon fresh lemon juice
1/2 teaspoon dried basil
pinch of salt

Make the dressing first by combining all the ingredients listed above in a jar with a tight-fitting lid. Shake vigorously for a few seconds until thoroughly blended. Refrigerate until needed.

Assembling the salad:

Place the spinach, tangerine pieces, tomato, onion, and almonds in a large bowl. Drizzle with dressing, and enjoy!
