1 12-ounce bag of chocolate cream sandwich cookies
8-ounce tub vegan cream cheese
10-ounces vegan chocolate
1/2 cup cocoa powder
Place the sandwich cookies into a Food Processor. Pulse a few times to break up the cookies, add the cream cheese and blend until paste-like.
Meanwhile, using a double boiler, melt the chocolate, stirring occasionally.
Roll the crushed cookie and cream cheese mixture into 1-inch balls, then dip the chocolate balls into the melted chocolate to coat, placing them on parchment paper until you've used all of the chocolate mix.
Once you've rolled all of the mixture into balls, place them in the freezer for 20 to 30 minutes.
Remove the truffle balls from the freezer, roll them in the cocoa powder, and they're ready to serve.
Store all leftovers in the refrigerator and enjoy within 3 to 5 days.
