Macaroni and cheese is comfort food at its best. We hope you love this one as much as we do!

1 1/2 cups dry ditalini, shell, or macaroni pasta
5 ounces vegan cheddar cheese, grated
2 tablespoons cashew butter
1 cup vegetable broth
Kosher salt and freshly ground black pepper

Cook the pasta according to the package directions, then drain.

Meanwhile, in a medium-sized pot add the cheese, cashew butter (we like Artisana Organic Raw Cashew Butter), and broth. Stir constantly over medium heat until the cheese has melted and the sauce has thickened.

Add the pasta to the cheese sauce and stir to coat. Remove from heat and serve warm.
