Mac 'N Cheese is comfort food at its best. We hope you love this one as much as we do!
1 1/2 cups dry ditalini or elbow pasta
5 ounces vegan cheddar cheese, grated (we like Follow Your Heart brand)
2 Tbsp cashew butter
1 cup vegetable broth
Kosher salt and freshly ground black pepper
Cook the pasta until al dente according to the package directions, and drain.
In a medium size pot add cheese, cashew butter (we like Artisana Organic Raw Cashew Butter), broth, and pasta. Stir constantly over medium heat just until the cheese has melted and the sauce has started to thicken. Remove from heat and serve immediately.
