Mac and Cheese is"comfort" food at its best. Our Smoky Cajun "adult" version is a delicious twist on a childhood classic.

8 ounces dried whole wheat macaroni
1 1/2 cups nondairy milk
1 teaspoon Better Than Bouillon No Chicken Base
1 1/2 cup vegan cheddar cheese, shredded
1 1/2 cup vegan mozzarella, shredded
1/8 teaspoon liquid smoke
1/2 teaspoon Cajun seasoning
salt and pepper to taste

Bring a large pot of heavily salted water to a boil. Add the macaroni and cook until pasta is al dente. Drain and return to the pan.

In a medium saucepan, add the milk, bouillon, cheddar, mozzarella, liquid smoke, and Cajun seasoning and bring to a boil, whisking frequently. Reduce heat to low and let simmer until the sauce thickens. Adjust seasonings to taste. Pour the sauce over the macaroni, toss to coat, and serve immediately.

Sprinkle each serving with additional Cajun seasoning if desired.

If you're craving the classic tasting macaroni and cheese you grew up on, omit the liquid smoke and Cajun seasoning.
