Grilled Peach Salsa

This salsa will leave your guests asking exactly how you made this delicious concoction. So go ahead and tell them... "it's magic!"

6 to 8 peaches
1/2 teaspoon light extra virgin olive oil
1/2 medium red onion, chopped
2 Roma tomatoes, chopped
1 to 2 serrano peppers, minced
Juice of two limes
pinch of salt
1/4 cup cilantro, stems removed, chopped

Cut each peach in half and remove the seed. Leaving the skin on, cut each half into five wedges. Place the wedges in a large bowl with the oil, then toss them together.

Heat your grill to medium-high and place the peaches, flesh side down, for about 1 minute to add a few grill marks.

Remove the peaches and let them cool while you chop the rest. Once the peaches have cooled enough to handle, cut them into small pieces, then mix everything.

Chill for 30 minutes or so before serving with your favorite tortilla chips.
