Grilled Peach Salsa

This salsa will leave your guests asking exactly how you made this delicious concoction. So go ahead and tell them... "it's magic!"

6 to 8 peaches
1/2 teaspoon canola or vegetable oil
1/2 medium red onion, chopped
2 Roma tomatoes, chopped
1 to 2 serrano peppers, minced
Juice of two limes
pinch of salt
1/4 cup cilantro, stems removed, chopped

Cut each peach in half and remove the seed. Leaving the skin on, cut each half into five wedges. Place the wedges in a large bowl along with the oil and toss them all together.

Heat your grill over medium-high heat and place the peaches on the flesh side down for about 1 minute, each side. You're not cooking the peaches; you want them on the grill long enough to see a few charred grill marks here and there.

Remove the peaches and let them cool down while you chop everything else. Once the peaches have cooled enough for you to handle them, cut them into small pieces, and then mix everything.

Chill for 30 minutes or so before serving with your favorite tortilla chips.
