Apple cider vinegar makes a delicious base for this vinaigrette and has many health benefits. It's good for digestion, skin, and the immune system.

1/4 cup apple cider vinegar
1 tablespoon Dijon mustard
2 tablespoons pure maple syrup
1/3 cup extra-virgin olive oil
sea salt
freshly ground pepper (optional)

Whisk together the vinegar, mustard, and maple syrup in a mixing bowl.

While whisking, slowly drizzle in the olive oil.

Season to taste with salt and pepper.

Store unused portion in a Salad Dressing Bottle.

This vinaigrette is delicious on simple, fresh greens or a garden salad. Refrigerate any unused portion and enjoy it within 10 to 14 days.
