Tofu Marinated with Parsley, Garlic, and Olive Oil

This tasty tofu appetizer is delicious on its own or served on a bed of fresh greens.

2 12-ounce blocks of firm organic tofu
2 large cloves of garlic, minced
1/2 cup finely chopped fresh parsley
pinch of salt and black pepper
1 tablespoon capers
1/4 cup fresh squeezed lemon juice
1/4 cup olive oil
1 tablespoon lemon zest

Using a Tofu Press remove as much water from the tofu as possible. If you don't own a tofu press, use paper towels or a lint-free kitchen towel, pressing gently to remove the water.

Next, slice the block of tofu into thirds, cut each third into quarters, and then into cubes. Set the tofu aside.

Add the garlic, parsley, salt, black pepper, capers, lemon juice, olive oil, and lemon zest to a medium-sized bowl. Stir to combine.

Fold the tofu into the bowl gently, cover with plastic wrap, and refrigerate for several hours or overnight if possible.

Arrange the tofu bites in a serving bowl or on a platter, garnish with fresh lemon and herbs, or toss the tofu into a garden salad and serve with your favorite dressing.
