If you like spinach as much as we do, you're going to love this spinach soup; it's so delicious and easy to make, plus it's a great way to get your family to eat their spinach!

2 tablespoons olive oil
10 - 12 ounces fresh baby spinach, rinsed and drained
1 tablespoon roasted garlic
3/4 cup yellow onion, chopped
1/4 cup Earth Balance Butter
1/4 cup unbleached all-purpose flour
3 cups almond milk
2 teaspoons sea salt
1/2 teaspoon cayenne pepper (or to taste)
1/4 teaspoon freshly ground black pepper

Heat olive oil in a large soup pot over medium heat. Add the spinach and garlic and cook, continually stirring until the spinach has wilted.

Transfer the spinach to a blender, add 1/2 cup of water and blend until the mixture is mostly smooth.

Meanwhile, using the same soup pot, melt the butter and add the onion. Saute the onion until tender, continually stirring, for about 5 minutes.

Stir in the flour and cook for another 3 to 5 minutes, then add the milk, spinach mixture, salt, cayenne, and black pepper.

Continue to cook over medium heat while stirring until the soup thickens, about 3 to 5 minutes.

Serve immediately. Refrigerate any leftovers.
