Peppermint ice cream is a delicious holiday treat - but honestly, we find it to be a delightful treat any time of year!
Here's what you need:
1 14-ounce can coconut milk, chilled
1 pint dairy-free French vanilla creamer, chilled
1/2 cup sugar
2 teaspoons peppermint extract
5 peppermint candies, crushed
Add the coconut milk, creamer, sugar, and peppermint extract to a blender and blend until smooth.
Transfer the mixture to an Ice Cream Maker and stir in the crushed peppermint candy. Churn according to the manufacturer's instructions. If you don't have an ice cream maker, place the mixture in a sealed container and store it in the freezer. Whisk vigorously every hour for 6 hours.
Freeze for a minimum of two hours before serving.
