Peppermint ice cream is a delicious holiday treat - but honestly, we find it to be a delicious treat any time of year!
Here's what you need:
1 14-ounce can coconut milk, chilled
1 pint dairy-free French vanilla creamer, chilled
1/2 cup sugar
2 teaspoons peppermint extract
5 peppermint candies, crushed
Add the coconut milk, creamer, sugar, and peppermint extract to a blender and blend until smooth.
Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions. If you don't have an ice cream maker, just place the mixture in a sealed container and store in the freezer. Whisk vigorously every hour for 6 hours. Stir in the crushed peppermint candies or sprinkle them over the top of individual servings.
Allow the mixture to remain in the freezer for a minimum of two hours before serving.
