This is a delicious way to prepare carrots. The maple glaze adds a subtle sweetness, while roasting brings out their natural earthy flavor and goodness. You may never steam or boil them again!
8 cups cut carrots
1 teaspoon extra virgin olive oil
pinch of kosher salt
2 tablespoons Earth Balance butter
1 tablespoon maple syrup
freshly chopped parsley (optional)
Preheat oven to 425°
In a shallow baking dish toss carrots with oil and salt. Roast in the oven for 10 minutes.
Meanwhile, melt butter in a small saucepan. Remove from heat, add syrup, and stir to combine. Drizzle over carrots and toss gently to coat.
Return to oven and continue to roast another 10 minutes, or until carrots are tender and slightly browned.
Place the roasted carrots in a serving bowl and garnish with freshly chopped parsley if desired.
