Creamy mashed cauliflower is a great alternative to potatoes with only about a fifth of the calories. So whether counting calories is your thing or not, you've got to try this recipe! Mashed cauliflower is delicious!
1 medium head of cauliflower
4 tablespoons vegan butter
1/8 cup non-dairy milk
salt & pepper to taste
garnish with chopped fresh chives or parsley
Fill a large stockpot with water and heat to boiling over high heat.
Clean and cut the cauliflower into small pieces. Add the florets to the boiling water and cook for 8 to 10 minutes, or until very tender.
Drain well and remove as much water as possible. Remove excess water by laying the florets out onto a couple of paper towels working quickly not to let the florets cool down too much.
Carefully place the hot florets into a food processor (or use a mixer or hand blender). Add the butter and milk, and mix until creamy and smooth.
Add salt and pepper to taste.
Stir in the chives and serve warm.
