There are several variations of Cowboy Caviar, and we've tried a variety of them! We love fresh, delicious, easy-to-make dishes, and for that reason alone, we've come up with a simple recipe that doesn't disappoint.

1 12-ounce package frozen corn, thawed
1 15-ounce can Black-eyed peas, drained and rinsed
1 jalapeno, seeded and minced
1 large Tomato, seeded and diced
1 medium red bell pepper, diced
1/2 cup red onion, diced
1/2 cup bottled vegan Italian salad dressing
1/4 cup cilantro, minced
Juice of 1 lime
Salt and pepper, to taste
Tortilla chips

Start at the top of the ingredient list and work your way down, adding everything to a large bowl.

Gently fold everything together to combine, then pop it in the fridge for about 30 minutes to allow all those delicious flavors to marry. Don't worry if the corn is frozen. It'll thaw by the time you're ready to dig in!

Serve with your favorite tortilla chips or roll a giant spoonful up in a soft tortilla with a fist full of freshly chopped romaine lettuce (or kale) for a delicious meal.
