I am concerned that the eggplant would be under cooked only being in the oven for 10-12 minutes. What were other people's results when making this dish? I haven't done it yet but wanted to know before I tried.
I've made these a couple of times. The eggplant definitely cooks through at 10 to 12 minutes but still holds a little firmness, which is perfect for me since that's how I like it. But if you like the eggplant really soft, you might want to leave them in an additional few minutes until they're cooked the way you like them.
