Zucchini Fritters, or as some refer to them, Zucchini Cakes, are easy to make and super delicious!
At the end of last summer, we were gifted several large zucchini from family and friends. We added zucchini to soups and made zucchini bread and zucchini pasta. We sliced it, breaded it, grilled it, and fried it. And then, we shredded the last few and decided to freeze them so we could enjoy them throughout the fall and winter months in various recipes. Zucchini fritters became one of our favorite recipes during that time - and still are!
