It doesn't get any easier or more delicious than this microwaveable Tex-Mex Casserole.
2 cups brown rice, cooked
1 1/2 cups salsa (mild or hot, your choice)
1 teaspoon chili powder (optional)
1 15-oz. can black beans, drained
1 15-oz. can whole kernel corn
2-ounces shredded vegan cheddar cheese
fresh cilantro (optional)
lime juice (optional)
Mix all of the ingredients in a microwave-safe casserole dish.
Microwave on high for 12 - 14 minutes.
Garnish with cilantro and lime if desired.
Let stand for 5 to 10 minutes before serving.
