Our family loves any pasta. This salad is one of my favorites because the flavor is fantastic, and it comes together in a snap.
1 pound vermicelli or spaghetti-style pasta
1/2 cup peppers (red, yellow, or green) finely diced
2 diced Roma tomatoes, seeds removed, diced small
1 cucumber, seeded and peeled, diced small
2 scallions, chopped
1 small bottle (8 to 10 ounces) of Wish-Bone Italian Dressing (or other vegan Italian dressing)
salt and pepper to taste
Cook pasta according to package directions.
Drain and immediately rinse with cold water to stop the cooking process.
Strain off the water and transfer the pasta to a large bowl.
Add the salad dressing and the vegetables and gently toss to coat.
Chill completely before serving.
Serve with Vegan Parmesan Cheese if desired.
