This Quinoa Fiesta Salad is not only delicious - it's super healthy! A high-protein salad you'll make again and again, and it couldn't be easier.
Throw it together for an entire week of power lunches at the start of your week.
The Salad:
1 15-ounce can of chickpeas, drained and rinsed
1 15-ounce can of black beans, drained and rinsed
1 red bell pepper, diced small
1 large avocado, diced small
1 cucumber, seeded and diced small
1 cup fresh spinach, chopped
3 cups prepared quinoa (1 cup dry quinoa will yield 3 cups prepared)
1 cup grape or cherry tomatoes, halved
The Dressing:
Juice of 1 lime
2 tablespoons agave
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
salt and pepper to taste
Drain and rinse the chickpeas and black beans and place them in a large bowl. Finely dice the bell pepper, avocado, and cucumber and add them to the chickpeas and black beans. Stir in the spinach, quinoa, and tomatoes.
To make the dressing, whisk together the lime juice, agave, cumin, and cayenne pepper in a small bowl. Drizzle and gently fold the mixture into the large bowl until everything is combined.
Salt and pepper to taste.
