This is such an amazing recipe and I’m so glad I ran across it! The yolk is delicious and perfect drizzled over an English Muffin. My favorite!

We like using canola oil for this recipe. If you're not a fan, you could use an oil you're more in favor of. However, it might change the flavor or the "yolk" somewhat.
