Smoked Tofu and Sweet Red Pepper Hash

Unlike our tofu scramble, we used our delicious smoked tofu and sweet red bell pepper to create this delicious breakfast favorite.

1 tablespoon olive oil
1/2 cup diced onion
1 sweet red Bell Pepper, diced
1 clove of garlic, minced
8 ounces Smoked Tofu
2 vegan sausage links, chopped, we like Amy's Veggie Sausage
2 tablespoons nutritional yeast
1/2 cup water
2 tablespoons vegan Worcestershire sauce
2 cups fresh spinach

Heat oil in a large skillet over medium heat. Add the onion and sweet pepper, and sauté until the vegetables are slightly tender. Stir in the garlic and continue to cook for another 1 to 2 minutes.

Add the smoked tofu, vegan sausage, and nutritional yeast, and stir to combine. Cook for 3 to 5 minutes more, stirring often.

Next, add the water and Worcestershire sauce. Simmer until a little more than half of the liquid has been absorbed.

Stir in the spinach, and continue to cook until the spinach is bright green and wilted.

Remove from the heat and season to taste with salt and freshly ground black pepper.

Serve with whole-grain toast or your favorite biscuit for a delicious meal!
