Skip the commercial energy bars and grab one of these power cookies for an afternoon pick-me-up. Packed with flavor, they're gluten-free, plus they include dates with vitamins and minerals for strong bones, skin, and hair. It's just good food!

1 cup rolled oats
1/2 cup sorghum flour
1/2 cup ground flax seed
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 cup chopped dried dates (or other dried fruit)
1/2 cup maple syrup
1/4 cup natural peanut butter
1 teaspoon vanilla extract

Preheat the oven to 350°, and line a baking sheet with parchment paper.

In a large mixing bowl, combine the oats, sorghum flour, flaxseed, salt, baking powder, cinnamon, and chopped dates.

Whisk the maple syrup, peanut butter, and vanilla extract in a medium-sized mixing bowl.

Pour the wet ingredients into the dry mixture and stir to combine.

Drop the dough into 12 even mounds on the lined baking sheet. Press down gently to flatten slightly.

Bake for 12 to 15 minutes or until cookies are just set in the center.

Yield 12 cookies.
