This creamy cucumber celery and dill salad is easy, light, refreshing, and perfect for spring or summer! And it's ready in about 10 minutes!

Here's what you need:

2 large English cucumbers, sliced thin
2 ribs of celery, sliced thin
1/4 cup vegan mayonnaise
1/4 cup vegan sour cream or greek style yogurt
3 tablespoons fresh dill, chopped, plus extra for garnish
1 tablespoon white wine vinegar
1 teaspoon grated or minced garlic
1/2 teaspoon sugar
1/4 teaspoon each, salt and pepper

Thinly slice the cucumber and celery into a large mixing bowl. Set aside.

Whisk together the mayo, sour cream, dill, vinegar, garlic, sugar, salt, and pepper in a small mixing bowl.

Pour the mixture over the cucumber slices and toss to coat.

Garnish with extra dill and serve immediately or cover and refrigerate.

This salad is best served the day you make it or the next. Beyond that, the cucumbers will begin to soften and lose their freshness.
