You haven't tasted Sautéed Spinach this good until you've had this sautéed spinach. Popeye would be proud!

2 pounds fresh tender Spinach leaves
1 tablespoons extra virgin olive oil
2 tablespoons garlic, pressed with a Garlic Press or very finely minced
Pinch of salt and pepper to taste
1 lemon (halved)

Rinse the spinach thoroughly in cold water and dry it in a Salad Spinner, or pat dry with paper towels.

Heat a large pot over medium heat. Add the olive oil and sauté the garlic for about a minute, until fragrant. Add the spinach, salt, and pepper to the pot.

Toss the spinach leaves with the garlic and oil, cover the pot, and continue to cook for 2 minutes.

Uncover the pan, turn the heat medium-high, and cook the spinach for another minute or until it's fully wilted.

Using a slotted spoon, lift the spinach into a serving bowl. Squeeze the juice of one-half lemon over the spinach. Adjust seasonings if needed.

Serve warm.
