Hearts of palm are low in calories and high in nutrients. In addition, their subtle earthy flavor makes them perfect for combining with other ingredients.
This is one of our favorite ways to enjoy hearts of palm.
1 - 14 oz. can of Heart of Palm, drained and chopped
3 tablespoons vegan mayo
1 teaspoon dijon mustard
1 teaspoon capers, chopped
1 stalk of celery, chopped
2 scallions, green parts only
pinch of salt and freshly ground black pepper
Combine all of the ingredients in a large bowl and chill. Then grab your favorite style of bread and add 1/4 to 1/2 cup of this delicious salad along with a mound of greens.
