Vegan tacos are delicious! You can make them in a variety of ways, and one of the best ways we've found is to fill them with a yummy plant-based crumble such as Boca Ground Crumbles, Gardein Beefless Ground, Beyond Meat Beef-Free Crumble, Lightlife Smart Ground, or.., well, we could go on and on. But you get the idea.

There are so many plant-based options, and some of them even come pre-seasoned with tacos in mind! You really can't go wrong. Just find the one that appeals to you (and your taste buds), and you'll be enjoying delicious tacos in no time.

1 package (13-ounces) of plant-based crumbles of choice
1/2 cup water
1 tablespoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon red pepper flake
1/4 teaspoon dried oregano
1/2 teaspoon paprika
2 teaspoons ground cumin
1 teaspoon sea salt
1/2 teaspoon black pepper
2 large tomatoes, diced and divided

8 to 10 hard shell corn tortillas
2 cups of lettuce, chopped
reserved diced tomato

Prepare the plant-based crumbles as directed, then stir in the water and all of the seasonings. Continue to cook until most of the water has cooked off, about 3 to 5 minutes. Finally, stir in approximately one-half of one diced tomato. Remove from the heat. Cover and keep the mixture warm.

Warm the tortillas in the microwave or oven, then fill with about 1/2 cup of the taco filling. Top with lettuce and a spoonful of fresh tomato, and enjoy!

Other toppings might include black olives, diced onion, shredded vegan cheese, vegan sour cream, salsa, taco sauce, or Sriacha.
